A Hobbit's Delight

Description: Mushrooms, nice crispy bacon, tomatoes...
Ingredients

1 pound portabella mushrooms (either large caps torn into chunks; pre-sliced; or baby bellas, halved)
1 pound assorted mushrooms (your choice)
1 medium onion, diced
1 pound sliced bacon
12 cherry tomatoes, halved
1/2 cup good red wine (if you wouldn't drink it, don't cook with it)
1 pinch ground nutmeg (place a small amount in the palm of your hand and take a good pinch from that)
2 tablespoons cold butter
Instructions

In a large skillet, fry the bacon until crisp. Set aside.

Drain a little more than half of the bacon drippings from the pan. To the remaining drippings, add the diced onion. Saute until onion is translucent. Add the portabella and assorted mushrooms; sprinkle the nutmeg over the top and saute until the mushrooms start to darken. Add the wine, lower the heat, and simmer until the liquid is reduced by half. Add the halved tomatoes; continue to simmer until the tomato skins begin to wrinkle. Crumble the bacon and stir into the mixture.
Turn off the heat and stir in the cold butter until it is completely melted, creating a nice buttery sauce.

Serve with sweet italian sausages as a side dish over rice or noodles or spread over slices of a hearty bread.

This was wonderful!!! I made it with 1.5 lbs of bacon and 1.5 lbs of mushrooms, simply because I am not so fond of mushrooms myself and I was making it for a group of my little sister's friends, whom I thought would not like mushrooms either. Boy, was I wrong! This was a HUGE hit! It was incredibly good and was the first thing to go. It was also fun to have something taken straight from the movie we were watching. I managed to save some for my Dad, and he was only sorry that there wasn't more! Kudos on this; it is marvelous!

Can the red wine be left out or substituted? I don't buy or drink wines. I am of age, but I'm not going to buy a bottle for one recipe.

Élistariel, it says that if you don't want to use red wine, then don't use it. Go right on ahead.

Neither my husband or I are very fond of wine, so I substituted beer instead of wine. It worked out great! When I cook it next time I will probably leave out the bacon and just cut the sausage into little ringlets and add that to it instead.

This is what I would call a mighty dish of mushrooms and bacon. Thanks to BerethEdhellen for determining that the quantity of wine is 1/2 cup. I made it for my family tonight and it was delicious! I served it as suggested, over noodles with sausages, but I don't think we needed the sausages. This dish is rich and hearty enough to serve as a main dish, especially over noodles. It was time-consuming to make, what with all the chopping of mushrooms and onions and frying up a pound of bacon, and between the butter and the bacon fat, it's not the healthiest thing you can eat. But it is absolutely yummy, and worth the effort. I'd make it again for a special occasion, or maybe for a potluck where I wanted to impress people. Yum!

This sounds absolutely wonderful.I'm writing this at lunch and am famished. What could I substitute for the alcohol?

starspray, it says in the recipe that you don't have to use the wine. Just go on ahead.

I probably shouldn't say this since I haven't tried it yet, but instead of red wine try red wine vinegar.

This sounds yummy and I can't wait to try it, but how much wine is "1/2 red wine"? Is it 1/2 cup? That sounds like too little. 1/2 pint maybe? Anybody know? The recipe says "If you wouldn't drink it, don't cook with it," which sounds to me like a warning against salted "cooking" wines. I'd use beef broth as a substitute.

I made it for Father's Day and my Dad loved it. I thought there were waaay too many mushrooms. I used Shitake for the extras. But I only put in a pound and a half of mushrooms instead of two pounds.
