Ingredients

Crust and topping:
2 c. old fashioned oats
2 1/2 c. all purpouse flour
1 1/2 c. sugar
2 tsp. baking powder
1 c. butter, melted

Filling:
1 1/2 c. thinly sliced, peeled apples
1 1/2 c. thinly sliced peaches
1 can sliced apricots(drained)
1 c. raspberry preserves
2 1/2 tbsp. all purpose flour
1 tsp. lemon juice


Instructions

Heat oven to 375 degrees F.

For crust and streusel, mix oats, flour, sugar and baking powder; mix well.
Add melted butter, mixing until moistened. Reserve 2 c., set aside. Press remaining oat mixture onto bottom of a 13x9" baking pan. Bake 15 min.

For filling, combine fruit, lemon juice and flour. Stir in preserves. Spread onto crust within 1/2" of edge. Sprinkle reserved oat mixture, pressing lightly. Bake 30-35 min., or until light golden brown.

Cool and cut into bars, or serve warm with vanilla ice cream.
