1/4 cup Self raising Flour
1/2 cup rolled oats
2 Tablespoons soft brown sugar
1/4 cup dried currants
1/2 cup finely chopped apricots
1 egg, lightly beaten
2 tablespoons margarine/butter, melted
1/2 teaspoon mixed spice


Preheat oven to moderate 180 C.
Line two oven trays with baking paper.
Sift flour with spice and sugar into medium sized bowl.
Stir in currants, apricots and oats.
Make well in centre.
Add combined egg and margarine/butter.
Using a wooden spoon, stir well until mixed.
Dropped heaped teaspoons of mixture onto prepared trays, allowing room to spread.
Bake 10-12 minutes or until golden brown.
Stand biscuits 5 minutes on trays before transferring to wire rack to cool.
