Ingredients
1 cup butter or margarine, softened2 cups sugar
3 large eggs
2 tablespoons buttermilk
1 1/2 teaspoons vanilla extract
5 cups all-purpose flour
1 teaspoon baking soda
2 tablespoons sugar
Instructions
Beat butter at medium speed with an electric mixer until creamy; gradually add 2 cups sugar, beating well. Add eggs, buttermilk, and vanilla; beat well.Combine flour and soda; gradually add to butter mixture, beating well. Cover and chill at least 8 hours.
Roll dough to 1/4-inch thickness on a lightly floured surface. Cut with a 3 1/2-inch round cookie cutter, and place 1 inch apart on lightly greased cookie sheets. Sprinkle with 2 tablespoons sugar.
Bake at 400 degrees for 7 to 8 minutes or until edges are lightly browned. Remove to wire racks to cool.

excellent! i had a few minor crisis’ while making them, no buttermilk, no baking soda, no rolling pin, no cookie cutter….
amazing what you can do when you improvise…milk and vinegar for buttermilk, went and bought the baking soda, used a can out of the pantry for a rolling pin and a funnel for a cookie cutter…turned out marvelous, awesome recipe!
