Ingredients

1 cup butter or margarine, softened
2 cups sugar
3 large eggs
2 tablespoons buttermilk
1 1/2 teaspoons vanilla extract
5 cups all-purpose flour
1 teaspoon baking soda
2 tablespoons sugar

Instructions

Beat butter at medium speed with an electric mixer until creamy; gradually add 2 cups sugar, beating well. Add eggs, buttermilk, and vanilla; beat well.

Combine flour and soda; gradually add to butter mixture, beating well. Cover and chill at least 8 hours.

Roll dough to 1/4-inch thickness on a lightly floured surface. Cut with a 3 1/2-inch round cookie cutter, and place 1 inch apart on lightly greased cookie sheets. Sprinkle with 2 tablespoons sugar.

Bake at 400 degrees for 7 to 8 minutes or until edges are lightly browned. Remove to wire racks to cool.
