Ingredients
10 medium potatoes, peeled and chopped into 1" pieces5 slices bacon, chopped
1/2 onion, chopped
1 lb. smoked sausage
1 c. milk
1 lb. Velveeta cheese, cubed
Salt
pepper
water for cooking
Instructions
In large pot, fry bacon peices untill done. Place on paper towels to drain. Reserve. Drain all but a little grease off.Put in onions and cook over medium heat until clear. Add potatoes and enough water to cover; continue heating till water comes to boil. Add sliced sausage and cook until potatoes are done. Add milk, stir and lower heat.
In 4-cup measure, place about 1 cup of broth. Whisk in 2 tbsp. flour; stir into soup. Add cubed Velveeta and stir untill melted. Adjust seasoning to taste.
Serve with piping hot, fresh-from-the oven bread to really warm up the bones!

This chowder is delicious! I added a bit of crushed dried rosemary (maybe a teaspoon) and a pinch of Hungarian paprika and it was incredible! Garlic seems to work nicely, as well.
Best soup me any my family has ever tasted. They beg me to make it weekly and we eat it by the bucket full.
