Ingredients

2 red bell peppers, halved and seeded
45 ml/ 3 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, crushed
675g/ 1½ lb. ripe tomatoes
150ml/ ¼ pint/ 2/3 cups red wine
600ml/ 1 pint/ 2 ½ cups chicken stock
Salt and ground black pepper
Chopped fresh chives for garnish


Instructions

Cut each red pepper half into quarters. Place skin side up on grill (broiler) rack and cook until skins are charred. Transfer to a bowl and cover or pop into a plastic bag and seal.

Heat oil in a large pan. Add onion and garlic and cook gently until soft.

Meanwhile, remove skin from peppers and coarsely chop. Cut tomatoes into chunks.

Put peppers and tomatoes to pan, then cover and cook gently for 10 minutes. Add wine and cook 5 minutes longer. Add the stock and salt and pepper and continue to simmer for 20 minutes.

Process soup in blender or food processor until smooth. Pour into clean glass or ceramic bowl and leave to cool thoroughly before chilling in refrigerator for at least 3 hours.

When soup is cold, season to taste with salt and pepper.

Serve topped with croutons and garnished with chopped chives
