Ingredients

250ml milk
450g caster sugar
4 tbsp golden syrup
50g broken chocolate
2 tsp vanilla essence
1 tsp almond essence
225g glace cherries (chopped)
175g blanched almonds (toasted and chopped)

Instructions

Put milk, sugar, syrup and chocolate in a large, heavy-based pan over gentle heat; stirring until chocolate has melted and sugar has dissolved.

Bring to the boil, and boil without stirring until it becomes a soft ball (114 degrees celsius). Leave to cool for around thirty minutes.

Beat in vanilla and almond essences until thick and smooth; stir in cherries and almonds.

Pour all into a greased square tin (about 23cm) and level the surface. Leave to set and then cut it into squares.
