Ingredients

1/2 head Iceberg or other crispy lettuce
10 cherry tomatoes, stems removed
125g halloumi cheese
2 slices white bread
1 tbsp. olive oil
1 clove garlic, pressed or minced
1/2 tsp. salt
Splash balsamic vinegar

Instructions

Shred lettuce into bowl.

Slice cheese first to about1/2 cm thickness, then cut into strips. Fry in a non-stick pan until cheese begins to colour. Pour over lettuce.

Cut bread into small cubes and saute with oil, garlic and salt until crispy. Add to salad.

Halve tomatoes and saute until they begin to caramelise (colour) and soften. Pour a splash of balsamic vinegar into the pan and swish around tomatoes, being careful not to break them up.

Add carmelised tomatoes to salad and serve while still warm.
