Description: Traditionally served at elven banquets. A wonderful, meringue, with a soft centre, filled with fruit.

Ingredients

4 Egg Whites
1 Cup Caster/Fruit Sugar
3 teaspoons Cornflour/Cornstarch
1 teaspoon White Vinegar
1 Cup Cream, whipped
1 Banana, sliced
250 g. punnet Strawberries, sliced
2 Kiwi fruit sliced
2 Passionfruit

Instructions

1. Preheat oven to slow 150 C. Line an oven tray with baking paper. Mark a 20 cm. circle on baking paper. Place egg whites in large, dry mixing bowl. Using electric beaters, beat egg whites until firm peaks form. Gradually add the sugar, beating constantly after each addition. Beat 5-10 minutes until sugar has dissolved. Fold in cornflour and vinegar.

2. Spread meringue mixture onto marked circle. Shape evenly, running a flat-bladed knife around edge and over top of meringue. Run knife up edge of meringue mixture all the way around, making furrows. This strengthens the meringue and gives a nice finish.

3. Bake for 40 minutes or until pale and crisp. Turn off oven, cool meringue in oven with door ajar. Top with whipped cream and fruit. Drizzle with passionfruit pulp. Serve.
