Ingredients

2 tbsp. butter or high-quality margarine
1/2 yellow or red onion, chopped
1 1/2 cups broccoli, coarsely chopped
1/2 c. red bell pepper, chopped
8 eggs
3/4 tsp. garlic salt
3/4 tsp. dried thyme -or- 1/2 tsp. fresh thyme, minced
1/4 tsp. freshly ground black pepper (can substitute regular black pepper if fresh ground unavaliable)
1/2 c. medium Cheddar cheese, shredded
1/2 c. Swiss cheese, shredded


Instructions

Preheat oven to 400 degrees F.

Melt butter in medium ovenproof skillet. Add onion; cook 5 minutes or till softened.

Add broccoli and red bell pepper; cook and stir an additional 5 minutes.

Beat together eggs, salt, thyme, and black pepper and pour into skillet. Cook 1 minute; stir and cook 1 minute more. Stir in cheeses.

Place uncovered skillet in oven and bake 10-15 minutes or until center is completely set.
