Description: Roasted chicken marinated in beer and spices to complement a hearty drink.

Ingredients

1 frozen chicken, whole
24 oz. beer (any brand)
1 tbsp. salt
1 tbsp. ground black pepper
1 tsp. flour
Lemon zest (to taste)

Instructions

Prepare chicken by partially thawing and then skinning. Place in a shallow pan. Lightly score the breast and other meat sections.

Mix dry ingredients together well. Rub into scores and over the chicken. (It will clump a little if the chicken is thawed completely.)

Pour 1/2 to 3/4 of the beer over chicken slowly, making sure to get some inside of it too. Let chicken sit for 15-30 mins in a fridge or 5-10 min. in a HEATING grill.

When time is up, pour the rest of the beer on and in the chicken. Place chicken in the fire or oven and let the beer cook off. (CAUTION-- beer may flame!) When beer is cooked off and juice remains, about 5-10 mins, baste every 5 mins. till done.
