Ingredients
1 package active dry yeast1 cup warm water
2 tsp. sugar
3/4 tsp. salt
1/4 cup olive oil or salad oil
2-2/3 to 3 cups all-purpose flour
Instructions
In a large bowl, sprinkle yeast over warm water and let stand for 5 minutes. Stir in sugar, salt, and oil. Add 2 cups of the flour and mix well. Beat in 2/3 cup more flour to make soft dough.Turn dough out onto a floured board and knead in the remaining 1/3-cup of flour until the dough is springy and smooth (about 10-15 minutes). Place in a greased bowl, turning dough to grease top. Cover and let rise in a warm place for about an hour, until doubled in size.
Punch dough down; knead briefly just to release air bubbles. Roll and stretch dough to fit a 12" or 14" pizza pan. With your fingers, press holes in dough at 1-inch intervals. Add toppings or flavorings as desired. Let rise, uncovered, until almost doubled (about 15-20 minutes).
Bake in a 450-degree oven for 12 to 15 minutes.
Topping ideas:
~ Brush with olive oil and sprinkle with herbs and Parmesan cheese.
~ Brush with olive oil and sprinkle with coarse salt and chopped green onions.
~ Spread pizza sauce over dough and add your favorite cheese and toppings.
