Description: Hearty taters, cheese, and meat good for 1st or 2nd breakfast. If you can't get Gaffer to dig some taters, use frozen hashbrowns from the market.

Serves: 8 hungry hobbits
Prep Time: 10 min. setup, 50-60 min. baking
Difficulty: Easy
Ingredients
32-oz. bag frozen cube-style hashbrowns, thawed2 c. shredded sharp cheddar cheese
2 c. diced cooked ham or crumbled sausage
2-3 tbsp. minced onion (or to taste)
8 eggs
2 c. milk
Shire seasonings (salt, pepper, garlic, paprika, or your fave combo) to taste
Instructions
Preheat oven to 350 F.In a large bowl combine taters, 1c. cheese and meat. Toss with seasonings of your choice. Pour into a greased 9" x 13" baking dish.
In same bowl, beat eggs and milk together. Pour over tater mixture in dish.
Bake for 50-60 min.till golden brown and knife comes clean in the middle.
Sprinkle with remaining cheese. Let set for about 5 min., then serve with your fave scones or hearty bread and fruit.
You can put this together the evening before, then cover and refrigerate. Let set at room temp for 30 min. before baking.

I thought this was an excellent dish. I made this for my fimily and they all liked it. Even my little brother, who is usually very critical of my cooking, managed to give it a good review. The given recipe fed 5 of us with 1 small serving left over. (We can really put food away too!)
