Description: Beautiful home made raspberry jam

Serves: Should make about four to five lbs of jam.

Ingredients

1 kg of cleaned and hulled raspberries
1 kg of jam sugar
Small knob of butter


Instructions

Place 4 or 5 sized glass jam jars in warm water.

Take a large heavy based pan and put in the raspberries. Crush them gently with a wooden spoon then add the sugar. Place over a low heat until the sugar is melted then increase the heat until the mixture bubbles. Continue stirring throughout.

Add the butter and bring to a full rolling boil for four minutes.

As soon as the four minutes is up take off the heat and start potting up in warm jam jars. Seal and store in the fridge.

I always save a few extra raspberries and throw then into the mix in the last minute of cooking just to give a bit more body to the mixture.

Can also be made with strawberries
