Ingredients

1/2 pound of breakfast sausage or 1/2 pound of bacon sliced (bacon must be cut into 1/2 in" pieces-kitchen scissors work well for this)
1-2 medium plum tomatoes diced
1 medium onion diced
mushrooms(any kind although the ones from Farmer Maggot's garden are preferred). Use as many mushrooms as you and your company prefer; just be sure to slice them!
1 and 1/2 cups swiss or cheddar cheese
1 dozen eggs
salt/pepper/other seasonings to taste
chopped green onions for garnish(optional)

Instructions

Crack the dozen eggs and beat them till they are well mixed, set aside.
In a large pan crumble and cook the sausage(or bacon) over medium heat. When the meat is about half-cooked add the onions and mushrooms. Continue cooking until meat is done and veggies are cooked. DO NOT DRAIN GREASE! Add tomatoes, eggs and cheese. Stir all ingredients well and continue to cook until eggs are well scambled. About 3-5 minutes. Garnish with chopped green onions. Serve warm with taters and toast. A real hearty Hobbit favorite for first breakfast!
