Ingredients

2 1/2 cups self-raising flour
1/2 cup cream (thick is better)
1-1 1/4 cups lemonade
Extra self-raising flour for kneading
Milk and castor sugar, if desired

Instructions

Preheat oven to 200°C. Sift flour into a bowl and make a well in the centre. Add the lemonade and the cream to the well and mix with two knives until just combined. Turn onto a floured surface and knead lightly, forming a rectangular piece of dough. Don't overdo this or you'll end up with tough scones. Cut with a sharp knife into twelve pieces and place on a lined tray. Brush with milk and sprinkle with castor sugar if desired.Bake until risen and golden on top, about 20 minutes should do it. Wrap in a tea towel and place on a rack to cool slightly. Serve warm with butter, jam and cream.
