Ingredients

2 large potatoes, scrubbed and unpeeled
1 medium red onion, chopped
1 cup. corn kernels-- frozen or canned and drained
1/2 cup flour
3 eggs
Salt for seasoning
Olive oil
Salsa/sour cream/grated Cheddar or Monterey Jack cheese for topping

Instructions

Grate potatoes into colander. Place a weighted bowl on top and let contents drain into sink for about 10 minutes.

Remove bowl. Add chopped onion, corn, flour, and eggs; mix well.

In heavy skillet heat olive oil over medium heat. Drop large spoonsful of fritter mix into hot oil; flatten each with spatula and season with salt.

Let fry and brown well on each side. Remove and drain on paper towels.

Serve with dollops of salsa and/or sour cream, and grated cheese if desired.
