Ingredients
250g (9 oz.) self-raising flour50g (2 oz.) soft margarine
75g (3 oz.) castor sugar
200g (6 oz.) fresh blueberries
2 eggs (size 2)
1tsp. baking powder
Rind of 1 lemon, grated
250ml (8 fl oz.) milk
Instructions
Preheat your oven to 200 C/400 F/Gas Mark 6.Lightly grease a tray with 12 muffin holders with butter.
Put the flour and baking powder into a large bowl. Rub in the margarine with your fingers until the mixture looks like fine breadcrumbs.
Stir in the sugar, blueberries and grated lemon rind.
In a separate bowl, mix the eggs and milk. Once blended, add to the dry mixture of blueberries, sugar, flour etc.
Mix quickly to bring it all together. It should have a lumpy texture.
Spoon into the already-prepared tray, filling almost to the top.
Bake in preheated oven for about 25 minutes or until golden brown, well-risen, soft-to-the-touch muffins appear in your oven!
Leave the muffins to cool in the tray, then remove and place on a wire cooling rack to cool a little longer.
Serve warm with your favorite spreads.
