Ingredients
8-12 medium to large mushroomsOil for sauteeing
1/3 cup chopped black olives
3 tablespoons chopped onions
2 cups vegetable broth
1/4 cup bread crumbs
Instructions
Heat vegetable broth. Clean mushrooms, take off stems and chop, and scoop out caps.Saute mushroom stems and onions and oil. Continue to cook on medium heat for 2 or 3 minutes. Remove from heat.
Add olives and a few tablespoons vegetable broth. Add breadcrumbs. Add more vegetable broth or breadcrumbs if needed for a gooey, stuffing like consistency. Stuff caps with mixture.
Place in baking dish. Put pats of butter randomly on top of mushrooms. Pour rest of vegetable broth over top of mushrooms. Bake at 375 for 15-30 min.
Try to keep Merry and Pippin out of the kitchen till ready to serve!
