Serves: Makes 5 dozen cookies

Ingredients

1 1/2 c.(3 sticks) unsalted butter, softened
1 3/4 c. sugar, plus extra for rolling dough in
2 eggs
1/2 c. molasses
4 c. flour
4 tsp. baking soda
1/4 tsp. salt
2 tbsp. cinnamon
2 tbsp. ground ginger
1 tbsp. ground cloves


Instructions

Preheat oven to 375 degrees F.

In large bowl, cream butter and sugar. Add eggs and molasses and blend well.

In another bowl, combine flour, baking soda, salt and spices; beat into molasses mixture. Cover dough and refrigerate 45 minutes.

Line cookie sheets with parchment or wax paper. Roll chilled dough into walnut sized balls and roll each ball into extra sugar.

Place 3" apart on cookie sheets. Bake 10-12 minutes, or until outsides of cookies are crackly looking, but the insides are still soft. Slide paper off cookie sheet when done baking, and let cookies cool right on the paper.

Even though this recipe makes about 5 dozen cookies, they go very fast!
