Ingredients

16 oz. mushrooms, caps and stems separated.
1 tsp. butter
4 eggs
1/4 cup parmesan cheese - grated
salt

Instructions

1. Fry the mushrooms in the butter until the mushrooms are soft (but not overdone).
2. Cut or grate the mushrooms into irregular pieces and drain any liquid from the mushrooms.
3. Beat the eggs, add salt, mushrooms and half the cheese.
4. Cook in a skillet until the eggs are done.
5. Top with the rest of the cheese and serve.
