Ingredients
Bacon (to taste)1oz butter
1 lb button or chestnut mushrooms
1 tbsp. flour
1/4 pint milk
2 tsp Wholegrain mustard
2 tsp. fresh chopped tarragon
3 tbls sour cream
Chicory and/or lettuce leaves
Instructions
Fry bacon until barely crispy. Remove from skillet; do not drain drippings! Slice into bite-size pieces. Set aside; keep warm.Melt butter in skillet with bacon drippings.
Brown mushrooms in skillet for up to two minutes. Cover and steam until tender, about 5 minutes.
Stir in flour and milk. Heat, stirring continuously until thickened. Simmer for 2 minutes.
Stir in mustard, chopped tarragon, sour cream, and bacon pieces.
Serve on a nest of chicory and lettuce leaves and garnish as desired.

This recipe is execellent!
Nice! It works well. I had some frozen backon rashers so I chopped them up while thawing and pan-cooked them that way.
