Ingredients

12 OZ mushrooms [ I use only FRESH ones]
1 medium onion
1 cup cheddar cheese (OR grated Parmesan OR 8 oz cream cheese) [ I mix parmesan and cheddar usually]
1/4 pound butter, melted
4 eggs (extra large)
2 tablespoons chopped fresh parsley
1/4 teaspoon garlic powder OR 1 fresh garlic clove, chopped
1/2 teaspoon curry powder
2 1/2 cups seasoned stuffing mix, crushed [I use CORNBREAD stuffing mix]


Instructions

Preheat oven to 350 F

Place all ingredients in a food processor and pulse with on-and-off movement carefully. It should be well blended.
Place in a greased 8 or 9 inch quiche dish or an 11 X 7 inch Pyrex dish and bake 20 minutes. [Make sure the center is set, it may need a little more time.]
Cut into small wedges or squares & serve plain or with a sweet-&-sour mustard sauce.
