Ingredients
Broth:3 cups chicken broth
1 cup pork broth
½ tsp. each pepper & cumin
pinch saffron (for color)
salt (to taste)
8 oz. (2 ½ cups) sliced mushrooms
1 large onion or 1-2 cups leeks, sliced
¼ tsp. each ground cloves and pepper
Instructions
This recipe has two parts; the broth and the mushrooms.Instructions for the broth:
- Combine both broths and bring to a low boil.
- Add the spices, return to a boil, then reduce heat and allow to cook for a minute.
- Remove from heat and use or refrigerate for later.
Soup:
- Add the mushrooms and leeks or onions to broth.
- Bring to a boil, and then reduce heat and simmer until tender.

It’s just as the description says. Very tasty and easy to make (which I love). I couldn’t find pork broth, so I substituted a cup of white cooking wine and, because I like to fool around with a recipe, threw in some taters for ballast.
