Ingredients

1 Red Onion chopped
5 Peppers of varying degrees of mild and hot
A veggie like brocolli tops, green beans or fresh peas
Crush tomatoes (28oz can)
Freshly grated ginger about 2tbsps
juice of one lime
(heavy cream if it ends up being too hot, mix in a few table spoons to cool it down)
A full package of Thin Cut Chicken Cut or a similar amount of beef cubes or other meet (you decide)

Instructions

When cutting chilli peppers it's very important to wear protective gloves and do not ever touch your face/eyes.

Cut the tops of the pepper, remove the seed sack

Slice the pepper into thick strips then using the knife as a flat edge remove the top layer of the inner pepper which removes the ribs and upper membrane. If you get this stuff on you, you'll be very unhappy but use sugar water to help with any burning regular water won't do a thing.

Once you've got all your peppers in large clean strips with membranes/ribs off...julian them by cutting into long, thin strips...bell peppers you can cut a little bit larger because they are mild.

Heat some Olive oil in a large sauce pan or wok. Dump your peppers in before the oil becomes frying tempertaure.

Make sure to coat peppers with oil as you stir in the pan, add some salt.

You'll want to cook your meat seperately till almost done...do not put raw meats or partially raw meat in the stew the meat will just boil and you'll loose the flavor.

Add about half of the can of tom's to the peppers and stir together thoroughly and let simmer over medium-low heat while your meat cooks.

You'll also want to steam your veggies seperately. If you don't know how to steam just put them in boiling water for a few minutes till bright green do not let them get pea green then they are over done and will be soggy. You want your veggies slightly aldente.

After the peppers and toms have stewed for awhile add veggies and let simmer again, then add meat and allow to stimmer stirring everything together...add the additional tom sauce

Near the end add your chopped red onion and stir in thoroughly and then ginger stir, then lime juice stir.

You can let simmer some more but it's pretty much done...serve as desired.
