Ingredients

4 medium carrots
2 parsnips
1 lg. sweet onion
3 tbsp. butter
1/2 tsp. salt
1/2 tsp. ground ginger

Instructions

Oven: 350 degrees F.

Scrape carrots and parsnips. Peel and slice onion.

Place in a large square of heavy aluminum foil. Dot with butter; sprinkle with salt and ginger.

Fold foil, enclosing roots. Bake for 1 hour or until tender.
