Ingredients
* 7/8 of a cup of pumpkin* 3/4 of a cup of sugar (unprocessed sugar that still contains the molasses adds even more flavor to this recipe)
* 1/2 of a cup of unsweetened applesauce
* 2 tablespoons of flax meal (or 1 egg if you're not vegan)
* 1 tablespoon of molasses
* 1 teaspoon of pumpkin pie spice (a mix of cinnamon, cloves, and nutmeg)
* 1 and 5/8 of a cup of flour
* 1 teaspoon of baking powder
* 1/2 of a teaspoon of baking soda
* 1/4 of a teaspoon of salt
* 6 tablespoons (1/4 + 1/8 of a cup) of water
--For icing if desired:--
* 1 tablespoon of orange juice
* 1/2 of a cup plus 1/8 of a cup of powdered sugar
Instructions
Oven 350.Mix together flax meal and water. Add the pumpkin, sugar, applesauce, molasses, and pumpkin pie spice. Then mix in the rest (except for o.j. & powdered sugar). Bake at 350 for 1 hour in a greased bread pan until toothpick comes out clean. When cooled, mix together the orange juice and powdered sugar. Drizzle it over the bread. Eat quickly before Merry gets a hold of it, he'll polish it off before you can say "Brandybuck".
