Ingredients

Ground meat (I like to use turkey for chili)
Herbs and spices: chili powder, tumeric, cumin, oregano, onion powder, garlic powder, paprika or red pepper, salt, black pepper
1 green pepper, chopped (you can also add red and yellow for more flavor and color)
1 red onion, thinly sliced
1 white onion, chopped
Worcestershire sauce
Diced tomatoes
Diced jalepeño or other hot chili
I can tomato sauce or puree
Olive oil
Shredded cheddar cheese
Sour cream
Chives
1 clove fresh garlic, thinly sliced
Fresh-grated ginger

Instructions

Pre-chop onion and peppers

Tips for cutting onions: : Wet face, onion and knife thoroughly just prior to cutting. Alternately, chill onion well before cutting. Leave root end on while cutting rest.

Peppers: Remove all seeds, ribs and the top layer of membrane

Heat olive oil in pan (when the oil sizzles when you sprinkle water on it, you can add the ground meat.) I usually move and chop the meat with a spatula while it's cooking. Then add salt. Once it has all turned from red to gray...

Add Worch. sauce, shaking loosely over meat, then stir (I love that smell!)
Add herbs and spices one at a time. I usually start with the less hot and work my way up, sprinkling generously over meat and then stirring in each one to absorb flavor.

Meat will have started to brown and may crackle because of lack of moisture...don't worry :)

Add peppers, stir in

Add onions, stir in

Now add diced tomatoes (save a tbsp. for later); stir in

Add about half a can of the tomato sauce

Stir together well for a minute...now taste...continue to add spices to taste and desired hotness. Don't cook for too much longer after adding sauce and additional spice. Also, add your fresh garlic and ginger at the very last so they don't melt in and get lost--this really adds a nice kick. You can add up to another half a can of tom sauce for more sauciness.

Place in serving bowl.

Sprinkle on shredded cheddar
Red onion
Diced tomatoes
Sour cream
Chives

Is that good! I like mine really chunky with less sauce and very spicy!
