Ingredients
1 1/4 cup rice flour1/3 cup cornstarch or potato starch
1/3 cup tapioca starch (not granules, but powder)
1 tablespoon baking powder
1 1/2 teaspoons xantham gum
1/2 teaspoon salt
1/4 teaspoon vitamin C crystals
1/4 cup vegetable oil
2 eggs
1 1/3 cup milk
1/4 cup honey
1/3 cup seeds (sunflower, pumpkin, etc.) - optional
Instructions
Preheat oven to 350 F.In a large bowl, mix together all dry ingredients. In a small bowl, beat together wet ingredients. Pour wet mixture into dry, and mix until just combined (don't over mix). Stir in seeds if desired.
Pour into greased bread pan and bake 60-70 minutes, or until done.
Note: Most ingredients can be found in natural food stores (often in bulk sections).
This bread is a bit dense, and doesn't stay fresh for more than a few days, but you can easily freeze it: just pre-slice, and pop slices into the toaster.
