Ingredients

1 lb. ground beef
4 cloves garlic, peeled and pressed
1 small onion, chopped
1 bell pepper, chopped
1/3 c. chili powder
1 c. corn (fresh, frozen or canned and drained)
1 14 1/2 oz. can stewed tomatoes
2/3 c. long grain rice, uncooked
1 c. water
Shredded cheddar or Monterey Jack cheese
Tortilla chips




Instructions

In a fireproof casserole dish or cast-iron pot or skillet, brown ground beef over medium heat with garlic, onion, bell pepper and chili powder. Drain.

Stir in corn, tomatoes, rice and water. Cover. Reduce heat and simmer undisturbed for 20 minutes or until rice is thoroughly cooked.

Serve with shredded cheese and tortilla chips on top.
