Ingredients

1/2 cup dried currants
1 cup boiling water
2 cups whole wheat flour
1 cup white flour
1/2 cup quick cooking oats
2 tablespoons white sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 3/4 cups buttermilk
2 tablespoons vegetable oil or melted butter


Instructions

Preheat oven to 350 degrees F.

Place dried currants into a bowl and pour boiling water over all; wait 10 minutes. Drain well.

Combine all dry ingredients in a separate, large bowl. Stir well.

Make a hollow in the centre of dry mixture. Pour in buttermilk and oil or butter and stir until well moistened. Stir in currants until thoroughly mixed.

Turn dough out onto floured board and knead about 7 to 10 times or until smooth. Shape into 7"-8" flattened, round loaf and place on lightly greased cookie sheet. With a sharp knife, cut an X 1/2 inch deep on top of loaf.

Bake 65 to 70 minutes or until golden-brown and crusty.

Tastes great with jam, butter, or a nice cheese. This is one of my family's favourite recipes.
