Ingredients

Approx. 1 cup squash (sliced and quartered)
1/4 cup diced bell pepper
1 cup cubed Portobello mushrooms
1 medium-large tomato (sliced)
Olive oil or butter for cooking in
Spices to taste (I use paprika, oregano, parsley, and salt)

Instructions

Prepare all the vegetables and set aside. Put roughly a tablespoon of either butter or olive oil in a large frying pan and heat. When sufficiently heated, put the squash in the pan, stirring every few seconds with a spatula. Once the squash looks a bit soft, add the rest of the vegetables. The heat should now be on medium-high; you can add the spices at this point. Continue stirring the veggies until the squash is slightly brown and the mushrooms darken. Remove from heat and serve with pita bread.
