Ingredients

1 can nuts
1 egg white
1 tsp vanilla
2 tsp honey
1/2 C sugar
2 tsp ground cinnamon
1/4 tsp salt

*Note: Use your favorite nuts for this recipe. The only nuts not recommended are Brazil nuts.

Instructions

Preheat oven to 250.

In a mixing bowl, whisk egg white until it becomes frothy. Add vanilla and honey and whisk until it forms a soft foam (don't let it get stiff.)
Fold in nuts, coating them well.
Mix sugar, salt, and cinnamon in a separate bowl to combine, then toss mixture with nuts making sure they are well coated.

In the smaller bowl, make extra cinnamon-sugar.

Spray a baking pan with cooking spray and spread nuts in a single layer. Sprinkle with cinnamon-sugar.

Bake for 1 hour, stirring every 15 minutes. Spread nuts in single layer and sprinkle with more cinnamon sugar before putting them back in the oven.
For the last 15 minute interval, increase heat to 350.

Let nuts cool and store in an air-tight container.

These are very addicting. This recipe is easily doubled (or even tripled, etc) for larger crowds.
