Description: A sweet potato/yam chowder. For those days when you just have to have something to satisfy the soul!

Ingredients

2 tablespoons Margarine/Butter
1 large Onion
1 tablespoon Sugar
2 teaspoons Thyme
2 Bay Leaves
2 teaspoons Salt
1/2 teaspoon Black Pepper
6 cups Vegetable Stock
3 Yams & 4 Sweet Potatoes
(peeled and cut into cubes)
1 cup Sweetcorn
1 cup Heavy Cream
1 teaspoon minced Garlic
1/2 cup Parsley

Instructions

1. Melt butter. Caramalize onion and sugar in butter for 10 minutes. Add vegetable stock, thyme, bay leaf and salt and pepper. Add sweet potatoes, yams and corn. Simmer for 20 minutes until yams and sweet potatoes are tender.

2. Stir in cream. Remove bay leaf.

3. Puree 1/3 of mixture in blender. Return to pot. Stir in garlic. Serve with parsley on top.
