I've recently been relearning Sindarin and Tengwar and started learning English mode for Tengwar. I've been only using Orthographic mode and was wondering what the difference is between the two Z tengwa? https://www.pinterest.com/pin/329607266478717826
Are they interchangeable?

To answer your last remark first: you have to use a site like tinypic to show an image.

The tengwar you mean are essë (or ázë) and essë/ázë nuquerna, as you see in the examples in this document, ázë itself is hardly ever used. More on page 48.

Looking at page 48 I see for Z-Tengwar that every mode but alternate uses Ázë when 'z' is the first letter of the word and nuquerna 'z' when it comes after like in maze. So for writing a word like 'zest' you would use Ázë followed by 'e' mark over Silmë 's' and then 't' Tinco?

Ázë would indeed be used when it appears as the first sound of a word, but also if the 'z' follows another consonant, e.g. in bronze.
