Description: A good recipe from a friend who had it one night at Butterbur's.

Ingredients
1 large roasting chicken2 or 3 small limes (roll on counter or table top and pierce with a corn holder about 20 times each)
4 tsp. salt
1 tsp paprika
2 large cloves garlic, minced
2 cups water
Instructions
Preheat oven to 300º. Remove giblets and excess fat from cavity of chicken, rinse and pat dry. In small bowl mix salt, paprika, and garlic into paste. Rub half in cavity and half outside. Put pierced limes in cavity. Pour water in roasting pan. Place chicken on rack in baking pan and cover. Insert meat thermometer. Roast for 45-60 min. per lb., or until theremometer reaches 190º.
