Ingredients
IN ONE BOWL:2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
IN SECOND BOWL:
2 eggs
1 cup milk or cream
2/3 cup sugar
1/2 cup oil
1 teaspoon vanilla
1 1/2 cups blueberries
Instructions
Mix the ingredients in bowl one together. Mix ingredients in bowl two together. Add bowl one to bowl two and mix together really well. Add the blueberries. Fill slightly greased muffin pan 1/2 way for each individual muffin mould. Place in oven at 400 F. Bake for about 23 minutes or until toothpick inserted in middle comes out clean. Remove from pan and cool.

These turned out delicious! I changed the recipe a little, since I don’t care for blueberry muffins. (I used chocolate chips.) You were right about filling the molds up halfway– otherwise the grow into mountains!
