Ingredients

13 oz white sugar
3/4 pint water
Juice of 4 lemons
Rind of 1 lemon

Instructions

Put water in a pan and heat over a very low heat. Add sugar and let it dissolve, bring to the boil, add the lemon juice and rind, remove from heat.

Cover and cool then strain through a very fine sieve or cloth. Place in freezer in a polybox or similar. When frozen remove, break up with a fork and whisk. Return to the freezer and when re-frozen it's ready to serve.
