Ingredients

1 cup whipped butter
1 cup Splenda (a non-caloric sweetener made from sugar; also called sucralose you can also use Sweet 'n' Low)

2 eggs
3 teaspoons pure vanilla extract
1 cup soy flour
1 cup ground almonds
1/2-1 cup chopped Macadamia nuts (as many as you like)
1/2 teaspoon baking soda
1 up currants or raisins


Instructions

Combine butter, sugar, egg, and vanilla, beating until light and fluffy.

In a separate bowl combine flour, baking soda and almonds (almonds should be finely-ground almost to a flour. If you can't get or can't grind them yourself, substitute with almond flour)

Combine both mixtures, mix well

Add currants or raisins

Add Macadamia nuts

Once everything is mixed completely, use a tablespoon to spoon out mixture and form into balls. Flatten onto a greased baking sheet. Alternately, you can roll dough flat onto plastic wrap, then slowly push and roll together into a log. Then chill and slice just like premade cookie dough.

Bake at 350F for about 10 minutes until lightly golden brown.

These are more like English style biscuits than American style cookies, so they may seem mealy but are very tasty.
