Ingredients

185g dark chocolate
185g butter, plus extra for greasing
3 eggs, plus 3 extra yolks
6 tablespoons castor sugar
3 teaspoons plain flour

Instructions

Preheat the oven to 230 degrees C (446 F). Break the chocolate into a heatproof bowl set over a pan of simmering water. Add the butter and leave to melt. In a separate bowl, whisk the eggs, yolks and sugar until thickened (use an electric beater if you have one). Whisk in the melted chocolate mixture, then sieve over the flour and quickly fold in. Divide the mixture between six buttered moulds or ramekins. Bake the puddings for 6 minutes until the outside is set but the center is still soft. Serve immediately, but make sure you wear oven gloves when you remove the desserts!
