Ingredients

Crust:
2 c. flour
8 tbsp. shortening
1 tsp. granulated sugar
Water

Filling:
1 quart cooked apples
1 granny smith apple
10 cashew nuts (or more if it pleases you)


Instructions

Preheat the oven to 350 F. Combine the 2 cups of flour with the sugar, add
the shortening and mix until all of the shortening is dispersed. Add water, a little at a time (do not add all at once or you get a sticky mess). With your hands mix until it is a slightly dry dough, divide into 2 parts.

Flour the cutting board and rolling pin. Pat 1/2 of dough into a circle and then flatten slightly. Roll out until it is about 1/4 in thick (or thinner if you prefer a thin crust). Put the rolled out crust in an 8 inch pie pan. Put filling into pie. Cut up the whole apple and put the apple pieces on top along with the cashews. Roll out second half of pie dough as above and place on top.

Cut a design on the top to vent and crimp the crust edges. Put aluminum foil around the edge of the pie and cook for half an hour. Remove foil and cook for a further half hour. Remove from oven and let cool.
