Serves: 9
Prep Time: 15 minutes
Difficulty: Easy
Ingredients
1/4 cup butter6 tablespoon chopped onion
3/4 cup diced celery
2 1/2 cup hot water
2 medium boiling potatoes, peeled & cut
in 1/2 inch cubes (if you like potatoes,
use more)
3 cups fresh or frozen corn kernels,
thawed
2 tablespoons sugar (if this is too
sweet, use less)
2 teaspoons salt
dash of white pepper
3 tablespoons flour
1 quart of Half & Half
Instructions
Melt butter in saucepan. Add celery, onion and saute 5 minutes until soft, but not brown. Add water, potatoes, corn, sugar, salt and pepper. Cover and simmer until potatoes are barely tender, about 30 minutes. Whisk flour into 1 cup of Half & Half. Stir into soup. Add the remaining Half & Half. Simmer until soup has thickened to a creamy consistency, about 15 minutes. Season to taste with additional salt and pepper if needed. If too thick, add milk, if too thin, simmer 5-10 more minutes.

This recipe is AWESOME!!! I made it for and elvish party that I threw with my friends and everyone was impressed!!!
What is half&half?
I would really like to make this recipe, but I’ve never heard of it here in Belgium
Its half cream and half milk. My mom says you can make it your self with just mixing equal amounts of cream and milk.
Btw, Sounds REALLY good!!! I’m going to try it when I find the time.
