Ingredients

Finely grated Parmesean & Romano cheese, kind that comes in the can is fine
Fresh grated Parmesean
2 Eggs
Oregano
Basil
Garlic powder
Olive oil
Del Monte diced tomatoes with green chilis
Either thinly cut chicken cutlets (store package yields about 4 cutlets) or you'll have to pound some regular chicken breast till nice and flat and thin



Instructions

Dump some Parmesean/Romano on a large plate make a nice layer.
Mix in the herbs; add some salt and pepper.

Whisk the eggs in another bowl till smooth and orangey

Coat the cutlets in olive oil

Dip each in egg, then roll in the cheese. Mix till covered. Lay on a baking pan, or better yet, one of those for broiling with a sort of grill-like cover and pan underneath.

Once you've done all the cutlets, if you have some egg left pour it over the cutlets.

Because the cutlets are thin, they should cook quickly and evenly.
When they start to brown, just slightly spoon some of the diced tomatoes with chilis on top and sprinkle the freshly grated Parmesean on top. They should be done when cheese is melted.
