Ingredients

8 eggs, hardboiled
1 lb. ground sausage
1 tbsp. dried or freah snipped parsley
1/2 tsp. dried or snipped fresh sage
Pinch dried or fresh snipped thyme
Fat for frying
Flour for rolling
Salt and pepper
1 uncooked egg, beaten
Breadcrumbs

Instructions

Cool and peel eggs. Mix together sausage and herbs. Make 8 sausage patties large enough to fit around the eggs. Place an egg in the center of each patty and form the sausage around the egg.

Heat the fat in a heavy skillet, over medium heat.

Roll the patty and egg in flour seasoned with salt and pepper, then in beaten egg, then in breadcrumbs. Fry until sausage is completely cooked, about 5 minutes each side.
