Ingredients

1 15oz can Black Beans
1 c salsa
2 tbsp fresh chopped cilantro
1 tbsp fresh chopped flat-leaf parsley
1-2 tbsp flavorful hot sauce, such as Tapitio (optional)
Several slices French or Italian-style bread
salt and pepper to taste

Instructions

I personally find that this recipe is best when you use mild salsa and two tbsp of flavorful hot sauce, but you can use whatever tempurature of salsa you like and omit the hot sauce if you want to.

Combine the beans, salsa, cilantro, and hot sauce (if using) in a saucepan over medium heat. Let simmer for 5-10 minutes so the flavors have a chance to blend. While the beans are cooking, toast the bread. Once the flavors have mingled, add salt and pepper to taste, pour over the toasted bread, garnish with the parsley, and enjoy!
