Serves: Four elves or two hungry Hobbits
Prep Time: 10 minutes
Difficulty: Intermediate
Ingredients
1/4 cup Lite Bisquik Mix1 egg
2 tbsp. fructose or 4 tbsp. sugar
1/4 - 1/2 cup fat-free dry milk
Cinnamon and sugar
1 ts. Ghee
PAM
Marmalade or jam
Instructions
In a bowl mix Bisquik and fructose or sugar. Beat egg and add to dry ingredients. Slowly add milk making sure it does not get too thin. Add Ghee and mix.Spray 8 inch non-stick pan with Pam and heat gently. Add 1/4 cup prepared batter to evenly cover the bottom of the pan (pancake will be very thin). After about 90 seconds, turn pancake over and cook on the other site for 30 seconds.
Lay on plate and spread with your favorite jam or marmalade. Roll up and sprinkle with a mixture of cinnamon and sugar.
Repeat process with rest of batter.

The recipe is slightly unclear, as it is not stated that the dry milk needs to be made before being added and not everyone knows what ghee is, but the product is really delicious and not very hard!
