Ingredients
Crust and topping:2 c. old fashioned oats
2 1/2 c. all purpouse flour
1 1/2 c. sugar
2 tsp. baking powder
1 c. butter, melted
Filling:
1 1/2 c. thinly sliced, peeled apples
1 1/2 c. thinly sliced peaches
1 can sliced apricots(drained)
1 c. raspberry preserves
2 1/2 tbsp. all purpose flour
1 tsp. lemon juice
Instructions
Heat oven to 375 degrees F.For crust and streusel, mix oats, flour, sugar and baking powder; mix well.
Add melted butter, mixing until moistened. Reserve 2 c., set aside. Press remaining oat mixture onto bottom of a 13x9" baking pan. Bake 15 min.
For filling, combine fruit, lemon juice and flour. Stir in preserves. Spread onto crust within 1/2" of edge. Sprinkle reserved oat mixture, pressing lightly. Bake 30-35 min., or until light golden brown.
Cool and cut into bars, or serve warm with vanilla ice cream.

This recipe sounds like a very nice muesli bar sort of thing. I’m going to try it!
I made these but realized half way through I was out of some of the ingredients! So I made the following substitutions:
Instead of fresh peaches, canned peaches (about 1 and 1 half cups)
Instead of apple, canned mandarin oranges (a little less than 1 and 1 half cups)
Instead of apricots, canned mandarin oranges (about a cup)
Instead of raspberry preserves, half a cup of honey+a quarter cup of water+3 tablespoons of flour
I had no idea how they would turn out. But they were delicious! I thoroughly enjoyed eating this. Even my sister, who doesn’t really like mandarin oranges, liked this!
