Ingredients
6 tbsp butter6 rounded Tablespoons honey
2 eggs
1 cup flour
1 tsp baking powder
2 tbs warm milk
pinch of salt
1/4 tsp nutmeg
Instructions
Cream the butter and honey together. Beat in the eggs. Sift in the flour, baking soda, salt and nutmeg. Fold in the warm milk. Pour into a greased and parchment lined 7" by 3" round cake pan. Smooth the top.Bake at 350 degrees F. for about 45 minutes or until a toothpick inserted near the center comes out clean.
Let sit for 10 minutes, then loosen and turn out onto serving plate. Brush with 1 Tablespoon warm honey. Serve warm or cooled.

I made this cake for a class farewell, i have never seen a cake disappear so fast – it was amazing! Absolutely delicious, worthy of even the High Elves of the Grey Havens! 🙂
My grandmother was Ukrainian. She used to make a fabulous honey cake, but I never did get her to show me how to make it before she died. I felt like making something comforting like she would have made and was pleased to find this honey cake recipe! It’s a lot lighter in colour and texture than your typical Ukrainian honey cake, but goes down a treat with a cup of tea. Everyone in my family loved it!
