Ingredients
2 cans chicken broth2 cups water
2 packets of Good Seasons Italian Salad Dressing Mix
16 oz Velveeta Cheese
2 cans diced tomatoes, undrained
1 can black beans, drained and rinsed
1 cup corn (frozen or canned, but drain the can)
2 carrots, scraped and chopped
2 celery stalks, chopped
1 small onion, chopped
2 cups uncooked mini pasta (can use 1/2 cup of 4 different types for a nice variety)
Instructions
Brown veggies in 1 Tbsp oil in large saucepan or pot. Cook until crisp-tender, stirring occasionally. Add cans of tomatoes and beans, broth seasonings and water. Bring to a boil.Add pasta and simmer 10-12 minutes or untilo tender. Add Velveeta, cook until melted, stirring occasionally.
*If you want meatin this soup, cook the ground beef or chicken before the veggies, adding the veggies to the meat and continuing on with the directions.
*This soup can be frozen and kept for 2-3 months.

I am a sucker for soups… this is one of the best I have tried! I make it for every potluck and its always the first dish gone!
This looks REALLY good..but what does Calaquendi mean?
Is there and equivalent to the dressing mix I can use? I don’t thing we have it in Norway.
