Serves: Serves 6 six Elves or 3 hobbits
Prep Time: Including cooling time, 1 hour
Difficulty: Easy
Ingredients
4 leeks, washed thoroughly and sliced1 large onion, diced
2 cups chicken broth
1 cup half and half
1 cup heavy cream
16 oz potatoes, scrubbed and finely diced
Salt and pepper to taste
Nutmeg to taste
Instructions
Heat pototes and the leeks in chicken broth. Take half the potatoes out of the broth and reserve.Cool mixture slightly and puree in blender. Add half and half, pepper, salt and nutmeg, and cool completely.
After soup is cold, add reserved potatoes and heavy cream. Stir. Serve cold.
Can also be served hot when it gets cold outside, just skip the cooling process.

This is my recipe, but I soon realized that no elf could eat this and stay thin. So I used fat free half and half, and fat free milk and added some Osem Chicken bouillon to it to give it more zing, and it really tastes almost the same.
